Closets Always Tell a Story

February 20, 2014 Lydia Buschenfeldt

Healing is a funny thing.   The term implies that there is a definite end point...but I'm not entirely sure this is true.   This Sunday, we will shove all of our earthly possessions into a crammed Uhaul and move to a new home, a whopping 1.6 miles … [Read more...]

Trading in my Pills for Parsley

January 31, 2014 Lydia Buschenfeldt

I don't quite align with the phrase, "everything happens for a reason."   It just doesn't sit well with me.   It almost works...but...doesn't quite make it.   To me it implies too much of a sense of false comfort. I'm not ok with justifying … [Read more...]

Shine On

January 6, 2014 Lydia Buschenfeldt

In my family, December has always meant lights in the windows.    Velvety thick red ribbon twisting up the staircase.     Sending cards to friends and family, near and far. And racing to the mailbox every evening.   And … [Read more...]

The Land In Between

November 6, 2013 Lydia Buschenfeldt

I've been spending a lot of time lost in thought lately. In fact, I'd say most of October was spent percolating thoughts between my two ears. I've always been a fairly introspective and reflective person, but this has been on a new level - truly lost in … [Read more...]

Bug Slamming: Level 1

October 7, 2013 Lydia Buschenfeldt

Happy October, friends!   Yes, despite the (lovely!) 80 degree weather, it is in fact October. Crazy, huh?   September was sort of a blur.   I was diagnosed with the grand slam of tick borne diseases. I started treatment for aforementioned … [Read more...]

A Game Changer, perhaps?

September 7, 2013 Lydia Buschenfeldt

So, I spend a lot of time with doctors.    In fact, this morning I directed someone to the bathroom and instructed them how to label their urine sample.    True story. [Last name first, my friends, then first initial.]   But after my most recent trip to Mayo … [Read more...]

The First/Last Day of School

September 4, 2013 Lydia Buschenfeldt

This morning, many bleary-eyed students and teachers stared unbelievingly at their ringing alarm clocks, dragged themselves out of bed, dressed in their pre-determined and much thought about first-day-of-school outfits, and headed back to school.   [The health coach in … [Read more...]

Keeping the Faith

September 4, 2013 Lydia Buschenfeldt

You know that feeling when you leave a big test knowing you totally aced it, only to have it returned to you covered in red pen?   Or when you stay up late and don't do your homework because the weatherman literally promised that there would be a snow day, and not a … [Read more...]

This Story is Not Over

September 4, 2013 Lydia Buschenfeldt

Do you ever have those moments where you wonder how on earth you are going to describe a feeling, when you already know an adequate adjective doesn't even exist in the first place? No? Well I'm having one of those moments right now. Friends, in short, I am blown … [Read more...]

Trail Mix

Bulk Bin Trail Mix

September 4, 2018 Leave a Comment

Sure, it’s temptingly easy to grab a bag of pre-made trail mix –colorful, effortless, and with such fun names to boot! But have you ever stopped to glance at the nutrition facts of that bag of seemingly healthy options? More specifically, check out the sugar content. Some commercial brands of trail mix have as much sugar as a 16 oz bottle of soda! The main culprit is sweetened dried fruit, and some brands add candy as well. If that delicious mouthful of sweet and salty is your tastebuds’ desire, don’t despair. There are plenty of ways to make a delicious AND nutritious trail mix, all with ingredients from your grocery store bulk bin! [Read More…]

Now that we are heading into the warmer months of the year, you may find yourself wanting to spend less time in front of the hot stove top or oven. Pan roasted plantains

Pan-Roasted Plantains

May 1, 2018 Leave a Comment

Pan roasted plantains with mashed avocadoDespite the fact that plantains closely resemble a banana, they have a completely different flavor and are definitely not to be consumed raw (you’ll only make that mistake once!). Plantains are actually a vegetable, chock full of fiber, calcium and vitamin C. Pan-roasting the plantains allows them to caramelize, keeping the outside a little bit crispy and the inside nice and soft. Cinnamon, ginger and turmeric add a trifecta of anti-inflammatory goodness and a little sprinkle of sea salt makes these plantains absolutely irresistible. Enjoy as is, or my favorite way –- with mashed avocado! More…

I’d say Lydia Buschenfeldt has changed my life, but that wouldn’t be exactly true. What she does is even more powerful. Anyone can tell someone else what changes they ‘need’ to make to live a healthier life. It takes someone special to enable and empower you to change your own life. Lydia is that someone special. During every session, at every twist and turn and bump in the road, Lydia meets me where I am with an incredible amount of knowledge and patience, and helps me identify one or two steps forward to accomplish the goals I have for myself. She knows that each journey is different, and customizes our sessions so our discussions are tailored toward what I need in that moment to help me build the health, future and happiness that I deserve.
