Hatch Health and Hap­pi­ness saved my morn­ings!!! I was a new Cross­Fit ath­lete and starv­ing in the morn­ings and not eat­ing enough pro­tein. Lydia not only fig­ured out what was wrong, but gave me ideas, meth­ods, and recipes to make my morn­ing meal a suc­cess. And it has been a smash­ing suc­cess! I can make it to lunch with­out snack­ing. I’m more awake and effi­cient. And I love the food I am eating–it is deli­cious and nutri­tious! These changes came with­in the first cou­ple weeks of the pro­gram and were the most dra­mat­ic changes, but the whole pro­gram was a great way to solid­i­fy my oth­er goals and the great oth­er meth­ods Lydia gave me to accom­plish those goals. Lydia has a way of lis­ten­ing to my ram­bling and extract­ing exact­ly what I want to get out of a ses­sion. And then she per­fect­ly answered my ques­tions and gave me solu­tions. I worked with Lydia over the course of a 6 month peri­od dur­ing which she served as my health coach to help me regain con­trol over my eat­ing habits (to make them health­i­er), to improve my exer­cise habits, and to decrease the stress in my life relat­ed to my career. After suf­fer­ing the dev­as­ta­tion of sev­er­al ear­ly mis­car­riages, due to sus­pect­ed PCOS, and over­whelmed with the amount of infor­ma­tion out there about how to alter one’s lifestyle to reverse or sig­nif­i­cant­ly change the effects of PCOS on one’s body, I knew I need­ed help get­ting myself on the right track, and I found my answer in Lydia.

Since I live sev­er­al hours away from Lydia, our time togeth­er con­sist­ed of bi-week­ly one-hour phone meet­ings, and unlim­it­ed email con­tact dur­ing which she helped to gen­tly but firm­ly guide me towards health­i­er eat­ing habits, work habits, and an exer­cise sched­ule that is man­age­able and effec­tive. I looked for­ward to my meet­ings with Lydia, and felt (and still feel!) that she gen­uine­ly cares for me and the progress I made toward my well-being. Instead of mak­ing me feel inad­e­quate when I fell short of my expec­ta­tions for myself, Lydia helped me to see what accom­plish­ments I had still made, and worked with me to find solu­tions that would pro­mote health and hap­pi­ness with­out com­pro­mis­ing the changes occur­ring in my life that were affect­ing my pro­gram and result­ing in unex­pect­ed changes on my path to change. Lydia pro­vid­ed me with a wealth of infor­ma­tion on as to why the nutri­tion­al and exer­cise changes I was mak­ing would make a pos­i­tive impact on my health in even more ways than I was considering–and I have a resource to go back to and refer to and keep me moti­vat­ed. I am impressed that, even though our time togeth­er has come to an end, Lydia has kept in touch and con­tin­ues to touch base with me to see how I am doing. And, while the pro­gram was going on, she was my cheerleader–sending me cards, send­ing me unex­pect­ed praise in emails, and also prais­ing me in our phone calls…always using praise with purpose–not just cheer­ing for me hol­low­ly but with mean­ing by let­ting me know why she was cheer­ing for me and rein­forc­ing what I was doing cor­rect­ly to keep steer­ing me on the right direc­tion in a pos­i­tive way.

As I progress through the healthy, hap­py preg­nan­cy that I whole­heart­ed­ly believe is the result of the changes Lydia helped me to make in my life, I still hear myself think­ing “Lydia would be proud to know I took tonight off just to rest and re-group for me” or “I had greens 3 times today in 3 dif­fer­ent ways–Lydia would be thrilled”. Lydi­a’s sup­port has had a huge­ly pos­i­tive impact on my path towards health and hap­pi­ness, and with her help I have made not tem­po­rary changes but per­ma­nent, pos­i­tive lifestyle changes.

I only wish I could have had more time with Lydia, and look for­ward to work­ing with her again in the future!

But have you ever stopped to glance at the nutri­tion facts of that bag of seem­ing­ly healthy options? More specif­i­cal­ly, check out the sug­ar con­tent. Some com­mer­cial brands of trail mix have as much sug­ar as a 16 oz bot­tle of soda! The main cul­prit is sweet­ened dried fruit, and some brands add can­dy as well. Pan roasted plantains with mashed avocadoDespite the fact that plan­tains close­ly resem­ble a banana, they have a com­plete­ly dif­fer­ent fla­vor and are def­i­nite­ly not to be con­sumed raw (you’ll only make that mis­take once!). Plan­tains are actu­al­ly a veg­etable, chock full of fiber, cal­ci­um and vit­a­min C. Pan-roast­ing the plan­tains allows them to caramelize, keep­ing the out­side a lit­tle bit crispy and the inside nice and soft. Cin­na­mon, gin­ger and turmer­ic add a tri­fec­ta of anti-inflam­ma­to­ry good­ness and a lit­tle sprin­kle of sea salt makes these plan­tains absolute­ly irre­sistible.
