A robust green powder, matcha is a centuries-old type of tea used in Japanese tea ceremonies. Ingredients
Choose organic ingredients when possible
- 1 heaping cup pitted dates
- 1 heaping cup nuts of choice (cashews, almonds, etc.)
- 1 tablespoon matcha powder
- 1–2 tablespoons cacao nibs
- 1 tablespoon water
Optional: Cacao powder,coconut shreds, coarsely-ground nuts, puffed brown rice, Enjoy Life mini chocolate chips, etc. for rolling
Directions
- Place all ingredients (except water and optional rolling choices) in a food processor or high-powered blender and pulse until coarsely combined
- Add water and continue to process, until ingredients form a homogeneous mixture
- Using damp hands, roll mixture into balls
- Roll energy bites in toppings, if desired
