Smoothie Bowl
- 1⁄2 cup coconut water
- 1–2 handfuls of torn kale, stems removed (frozen kale works great!)
- 1 small cucumber, cut into chunks
- 1⁄2 inch piece of ginger, peeled and diced
- 1⁄3 large avocado
- 1⁄2 cup frozen pineapple
- Small handful of ice (optional)
- Medjool date, pit removed (optional)
- Plant-based protein powder (optional)
Toppings
These are purely suggestion; the possibilities are endless!
- Cacao Nibs
- Sliced fruit
- Hemp/Flax/Chia seeds
- Gluten-free cereal
- Goji berries
Directions
- Add ingredients, in order listed, to a high-speed blender. Aim for a very thick smoothie, and add more liquid if needed to blend.
- Pour into bowl and add desired toppings
