Choose organic ingredients when possible
- 1–2 cups leafy greens of choices
- 1 small cucumber, cubed
- ½ cup watermelon, thinly sliced
- ½ avocado, cubed
- 3 tablespoons basil, torn into pieces
- ¼ red onion, diced
- Olive oil and balsamic vinegar to taste
- Gently combine first 5 ingredients in a medium-sized bowl
- Dress to your taste with olive oil and balsamic vinegar
- Plate and enjoy!
*For an added protein boost, add white beans (home-cooked, or drained and rinsed from a can).
